Blueberry Pie

Several years ago, the kids and I picked blueberries.  I always intend to go back, but I can at least make a blueberry pie until we make the short journey to Nesbit Blueberry Plantation again.

This recipe for Basic Blueberry Pie Filling came from the Nesbit Farm.

4 c. Blueberries
1/2 cup Sugar (more if desired)
2 Tbsp. Cornstarch
2 tsp. Lemon Juice
1 Tbsp. Butter or Margarine

Mix all ingredients together in medium saucepan.  Cook over low heat, stirring constantly until sugar is dissolved.  Cook over medium heat until mixture comes to a boil.  Turn down heat and simmer until thickened.  Be sure to keep stirring until fruit is desired consistency. 

I pour the filling into a frozen pie crust and top with a second frozen pie crust and cook at 350 degrees for 25-30 minutes.

I think for this particular pie, I may have used refrigerated pie crust.
